These salmon cakes are absolutely scrumptious! My favourite way to enjoy them is with mixed greens and some sort of grain with a drizzle of balsamic reduction, a dollop of plain yogurt and a squeeze of lemon. They also make excellent salmon burgers!
Fish, especially salmon, is very high in omega-3 fats, which are so beneficial for our health. We could all stand to have more omega-3’s, particularly fish, as a regular part of our food repertoires. As a dietitian, I find that people’s biggest barriers to eating fish seem to be the expense and not knowing how to cook it. Well you won’t need to worry about either of those things with these delicious salmon cakes. This recipe uses canned sockeye salmon, which is much cheaper than buying fresh salmon. Also, canned salmon is already cooked, so you don’t need to worry about over or under-cooking the patties.
