Raspberry Dark Chocolate Banana Bread

raspberry loaf 3I couldn’t think of a better way to use the scrumptious raspberries from my backyard than to pair them with dark chocolate and banana in this decadent, moist and gooey raspberry dark chocolate banana bread.  It turns out that chocolate and raspberries are the BEST combination ever!  I know that’s no surprise, but seriously, you can smell the fresh raspberries while they’re baking….it doesn’t get much more mouth-watering than that!

Raspberry Dark Chocolate Banana Bread

Prep Time: 15 minutes

Cook Time: 60 minutes

Raspberry Dark Chocolate Banana Bread

Ingredients

1/2 cups all-purpose flour
1 1/2 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated white sugar
4 tbsp canola oil (or other light tasting oil)
2 large eggs
1 1/2 cups mashed ripe banana (about 3 bananas)
1/3 cup plain low fat yogurt
 or sour cream
1 teaspoon vanilla extract
3/4 cups dark chocolate chunks or chips
1 cup raspberries, tossed in 1 tablespoon all-purpose flour

Instructions

    Preheat oven to 350°F. Grease a 9x5-inch loaf pan with butter or oil.
    In a medium bowl, whisk together the flour, baking soda and salt.
    In a separate large bowl, whisk or beat the sugar and oil with a whisk or an electric mixer at medium speed until well blended. Add the eggs one at a time, beating well after each addition. Add the banana, yogurt, and vanilla; beat until blended. Stir in the flour mixture; just until moist. Don't over-mix. Stir in the chocolate chunks and then gently stir in the raspberries. If you want, you can sprinkle a few additional chocolate chunks and raspberries on the top to make it look pretty.
    Pour the batter into the prepared pan. Bake for 60 minutes or until a wooden pick inserted in center comes out clean. Cool for 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.
