Say WHAT?? Yes indeed, you read that correctly…there are CHICKPEAS in these delectable peanut butter cookies! I’ve never thought about putting chickpeas in a cookie before, and what an excellent idea it is! Who knew!?
Since the beginning of the new year, I’ve made it one of my goals to add legumes to as many meals and snacks as I can, and when I came across this recipe in the Province Newspaper, I thought “wow how creative, why didn’t I think if that”?! Feed these cookies to your friends and family and ask them to guess the secret ingredient. I guarantee you they’ll never guess right.
The trick is that the chickpeas replace the flour in this recipe. As I’ve mentioned before, chickpeas are very high in protein and fiber and are low in fat. Yup, you guessed it, that means they’ll keep you feeling full for a loooong time. Did you know that Canada is the leading exporter of lentils, peas and chickpeas? All the more reason to stock up on these little energy boosters!
