I couldn’t think of a more perfect Meatless Monday recipe than this flavourful thai quinoa salad with ginger peanut dressing. When I saw this recipe posted on one of my favourite food blogs, Ambitious Kitchen, I began drooling instantly, which was a sign that I just had to make it!
This is another one of my go-to lunch recipes, and who doesn’t need another easy lunch recipe, right? It’s full of fibre and keeps me full straight through to dinner. The combination of colourful vegetables contributes a variety of vitamins and minerals. The cashews add a crunch and the combination of peanut butter and ginger in the dressing is so unique! Serve this salad as a side or a main dish.
