In celebration of Meatless Monday, I wanted to share with you one of my fav quinoa salads! Every few weeks I whip up a batch of this salad and bring it to work for lunches. Trust me, this one’ll be sure to impress your coworkers and better yet, it’s so quick to make! There’s no baking involved, and while the quinoa is cooking for 15 minutes, you can prepare everything else.
The smooth and creamy avocado with the chewy dried fruit and the crunch from the almonds combines to make the perfect combination of deliciousness! Not to mention, the avocado and almonds are packed with healthy fats and the quinoa adds plenty of protein and fibre, so eat up!
