Edamame Soy Dip

Looking for the perfect potluck dish to wow your friends this summer?  Well here it is!  This edamame soy dip is perfect with fresh veggies and crackers and pita wedges.

I was first introduced to this recipe when I attended a workshop through Fresh Choice Kitchens at the Greater Vancouver Food Bank for community kitchen leaders.  I myself do not run any community kitchens, however I had the privilege of attending as a part of my dietetic internship.  I met so many inspiring individuals who run their own kitchens and I was so happy to have the opportunity to cook with them.  Together, we broke into 5 groups and each made 1 recipe.  I thought this dip was delicious and unique and something that I never tried before, so I just had to share it with you!

soy dip 2The soft tofu blends in so well, adding a punch of protein.  Edamame beans also offer plenty of protein, along with fibre and a whole ton of vitamins and minerals.  Like chickpeas, edamame beans are starchy, so they blend well to make the perfect textured dip.  I imagine this dip would also be mouth watering spread on a burger.

Edamame Soy Dip

Ingredients

1 package (454 g) frozen, shelled edamame beans
150 g soft tofu (1/2 package) *I buy the Silken Tofu
3 cloves garlic, chopped
1/4 cup feta cheese, crumbled
3 tbsp lemon juice
2 tbsp extra virgin olive oil
1/4 tsp sea salt

Instructions

    In a medium saucepan, bring 4 cups water to a boil. Add edamame, reduce heat and simmer for 5 minutes. beans will turn bright green.
    Drain the beans an rinse under cold water to cool.
    Place all the ingredients in a food processor and blend until smooth.
    Transfer to a serving bowl and let sit for 1/2 hour before serving to allow flavours to blend.
