Looking for the perfect potluck dish to wow your friends this summer? Well here it is! This edamame soy dip is perfect with fresh veggies and crackers and pita wedges.
I was first introduced to this recipe when I attended a workshop through Fresh Choice Kitchens at the Greater Vancouver Food Bank for community kitchen leaders. I myself do not run any community kitchens, however I had the privilege of attending as a part of my dietetic internship. I met so many inspiring individuals who run their own kitchens and I was so happy to have the opportunity to cook with them. Together, we broke into 5 groups and each made 1 recipe. I thought this dip was delicious and unique and something that I never tried before, so I just had to share it with you!
The soft tofu blends in so well, adding a punch of protein. Edamame beans also offer plenty of protein, along with fibre and a whole ton of vitamins and minerals. Like chickpeas, edamame beans are starchy, so they blend well to make the perfect textured dip. I imagine this dip would also be mouth watering spread on a burger.
