There’s so much goodness packed into these energizing no-bake balls. When my pantry and freezer are overflowing with dried fruit and nuts, I put some handfuls of whatever I have in my food processor. This recipe is a favourite at my house and it’s similar to my apricot energy bites. They’re the perfect on-the-go snack, whether you need an energy boost for a workout or simply to get you through the afternoon!
Coconut Cashew & Cranberry Energy Bites
Ingredients
1 cup dried cranberries
1 cup dates
1 cup shredded unsweetened coconut
3/4 cups raw cashews (unsalted)
Instructions
Place all ingredients into a food processor and pulse until the mixture sticks together and holds its shape (be careful to not over mix).
Notes
If the consistency is not quite right, continue to add ingredients (either more dates or cashews) until you achieve the right consistency.
