Clafouti

clafouti 2I’ve been dying to share this recipe with you for awhile now, but I had to wait until my favourite fruits were in season.  So here it is!  Clafouti is a baked French dessert, traditionally made with black cherries arranged in a buttered dish and covered with a thick flan-like batter. clafouti 4Since it requires only a small amount of the most basic baking ingredients, It’s easy to just whip up in a flash. Clafoutis are perfect for using up fruit that is just about over-ripe.  I used local blueberries, strawberries and nectarines in mine.  All berries, peaches and plums are also delicious. What I love about this dessert is that it’s so light.  It’s the perfect after dinner dessert that won’t leave you feeling too full. clafouti 1

Prep Time: 15 minutes

Cook Time: 40 minutes

Clafouti

Ingredients

• 3 eggs
• 3/4 cups all purpose flour
1-1/2 cups warm milk
1/2 cup white sugar
1-1/2 tbsp butter, melted
pinch of salt
1-1/2 tsp vanilla extract or flavoured liquor (eg. Amaretto)
1 lb fresh or canned fruit of your choice
1 tbsp icing sugar (optional)

Instructions

    Preheat oven to 425 F
    Grease a large, shallow baking dish with soft butter
    In a medium sized bowl, beat eggs with a whisk and gradually stir in flour. When the mixture is smooth, whisk in the milk, sugar, melted butter and alcohol/extract, and salt.
    Pour a thin layer of batter into dish, to cover the bottom by 1/4 inch. Put it in oven for 2-3 minutes until nearly set.
    Remove from oven, press fruit into set batter, cut side down. Pour remaining batter over fruit.
    Return dish to oven. Reduce heat to 400 F and bake until golden and puffed, about 30-35 minutes.
    Remove from oven. Sprinkle with icing sugar. Serve warm or cold. Serves 6 to 8.
