I’ve been dying to share this recipe with you for awhile now, but I had to wait until my favourite fruits were in season. So here it is! Clafouti is a baked French dessert, traditionally made with black cherries arranged in a buttered dish and covered with a thick flan-like batter.
Since it requires only a small amount of the most basic baking ingredients, It’s easy to just whip up in a flash. Clafoutis are perfect for using up fruit that is just about over-ripe. I used local blueberries, strawberries and nectarines in mine. All berries, peaches and plums are also delicious. What I love about this dessert is that it’s so light. It’s the perfect after dinner dessert that won’t leave you feeling too full.
