Carrot Cake Bliss Balls

carrot date energy bites 2Happy Easter! On this Easter Sunday I’m thinking about two foods: chocolate and carrots. They balance each other out, right? I do love my chocolate, but these Carrot Cake Bliss Balls are a healthy sweet treat that you can eat a lot of and still feel great.

carrot date energy bites 3Making your own energy snacks is a great way to avoid packaged snack bars, and is also a great way to save money at the grocery store. They’re the perfect punch of energy  you need to get you through that tough workout, or just through the work day. They’re a great balance of fibre and protein, which is what a healthy, balanced snack should have. Store these in the fridge for 3-4 days or the freezer for 3-4 months and take them out as you need them.

Carrot Cake Bliss Balls

Total Time: 20 minutes

Yield: 20 balls

Carrot Cake Bliss Balls

Ingredients

1 cup cashews
1 cup unsweetened shredded coconut
1 cup roughly chopped carrot
1 cup dates, pitted
1 cup dried apricots
1/2 tsp cinnamon
1/2 tsp vanilla extract

Instructions

    Place all ingredients into a food processor, and blend until the mixture can be formed into balls. Be careful not to over mix, as mixture will be too sticky.
    Use your hands to roll the mixture into balls. Store in the fridge for 3-4 days or in the freezer for 3-4 months.
