Berry Mojito Yogurt Popsicle

With summer right around the corner, it’s time to swap out those soup spoons for a fresh, fruity snack – yogurt popsicles, mojito style. You heard that right – nothing like a refreshing, fruity popsicle to help you beat the summer sun. It’s time to dig out those popsicle moulds, because you’re in for a treat.

These yogurt popsicles transport you to the tropics, while adding more nutrients into your day. Greek yogurt is similar to regular yogurt, except that it has been strained to remove the whey (in simpler terms, the liquid), giving it a thicker consistency and a boost in protein, leaving you feeling more full and satisfied. Greek yogurt is also loaded with calcium, making it a healthy option for your next treat or snack. Calcium is important to help build and maintain strong bones – without it, bones can become weaker over time, increasing the risk of fracture.

Store bought popsicles can be packed with added sugars and flavourings, and contain very little fruit. Some also have artificial colours, which means the pink strawberry popsicle you see in the store may actually have little to no strawberries at all, yikes! Homemade popsicles are a great way for you to get creative with many different flavour combinations while maintaining control over what you’re adding and how much you’re adding (hence, less refined sugars).

This recipe uses plain, unsweetened Greek yogurt and is lightly sweetened with a little bit of honey and the natural sugars in the berries. Stock your freezer with these easy, delicious, and healthy popsicles that you can take on the go.

Berry Mojito Yogurt Popsicle

Prep Time: 15 minutes

Yield: 6

Berry Mojito Yogurt Popsicle

Ingredients

1 cup plain 1% Greek yogurt
3 tbsp honey, divided
1 ½ cup fresh or frozen mixed berries
4 fresh mint leaves
1 tbsp lime juice (juice from ½ lime)

Instructions

    Roughly mince the fresh mint leaves.
    Place the berries, minced mint, lime juice, and 1 tbsp of honey into a food processor. Blend until desired consistency (I like when the mixture resembles a puree with small chunks). Set aside.
    In a medium bowl, whisk together the yogurt and remaining 2 tbsp of honey.
    Alternate pouring spoonfuls of yogurt and berry mixture into each mould until filled.
    To create a swirled appearance, use a popsicle stick to slightly mix the yogurt and berry mixture together.
    Insert popsicle sticks into each mould and freeze for approximately 6 hours or until the popsicles are hard. To remove the popsicles, run the sides of the mould under warm water until they release from the mould.
