Baked Yam Fries

Crispy yam fries with chipotle mayo are the ultimate pub/bar food.  And because I’m a sucker for yam fries and don’t always want to eat the fried version, I do what I usually do and tried to recreate this delicious comfort food at home.  Baking the yams instead of frying is a great option, however it’s difficult to end up with crispy instead of soggy fries.  I’ve tried different variations including slicing them really thin, and dipping them in egg whites, but what I’ve found works the best is coating the yams in cornstarch or flour before tossing them with oil.  And make sure to leave space in between the fries when baking.

yam collageAnd in case you weren’t already sold on making these, yams are packed with fibre, B vitamins, vitamin C, vitamin A, beta carotene and potassium, just to name a few!

Baked Yam Fries

Ingredients

2-3 large yams, unpeeled and cut into 1/2 inch fry pieces
1-2 tbsp flour or corn starch
2 tbsp olive oil
1 tsp sea salt
1/2 tsp cinnamon

Instructions

    Preheat oven to 450 degrees.
    Place cut yams into a large bowl and sprinkle with flour or corn starch and toss until evenly coated.
    Drizzle with olive oil and toss. Sprinkle with sea salt and cinnamon and other spices if desired.
    Line 2 baking sheets with parchment paper and place fries in a single layer on baking sheets.
    Bake for 10-15 minutes and then flip and bake for 10-15 minutes more, until fries are crispy and tender in the middle.
    Serve with a dipping sauce. Click here for my favourite honey mustard recipe.

    I will have to try your tip on the cornstarch – I too suffer from less than crispy yam fries.
