Honestly, these cucumber fries sort of happened by accident. Zucchini fries are quite popular, but cucumber fries….can’t say I’ve ever really heard of them. I had intentions of making zucchini fries, but during my rushed grocery shop, I grabbed two English cucumbers, thinking that they were zucchini. I didn’t even notice that they were cucumbers until I had already eaten half of the batch. But, who cares….they were a delicious accident!
Because cucumbers are so firm, the “fries” hold their shape and won’t go soggy, even the next day. Serve them with your favourite dip. I love Greek yogurt mixed with dried herbs and dehydrated onion. These make a great appy and are a nice change from the usual veggie and dip plate. And not to mention, unlike the zucchini fries you buy frozen or order at restaurants, they’re not drenched in oil.
