Almond milk has been on my list of things to make for awhile now and it turns out that it’s incredibly easy! All you need is almonds, water and a food processor or blender. I used my food processor, but a blender would be much better for this type of thing. I found that the food processor doesn’t chop up the almonds very finely, whereas a blender would. I would recommend a Vitamix or a Blendtec (click here to see my fellow foodie’s product review on the Blendtec blender).
I’ve sure noticed that almond milk has been flying off the shelves recently. Some individuals can’t tolerate cow’s milk, or choose not to drink it for various reasons, so almond and soy milks are popular alternatives. But just like any food or beverage that’s processed and sold in grocery stores, read the nutrition facts table and ingredient list on the package, so that you know exactly what’s in the product. Almonds and water aren’t the only ingredients in store-bought almond milk. Stabilizers, emulsifiers and other ingredients (evaporated cane juice, sea salt, carrageenan, sunflower lecithin) are added in order to keep the product fresh for more than a few days, and in some cases, shelf stable. The benefit of purchasing these milks in the store is that most, if not all, are fortified with vitamins A, D and calcium (just like cow’s milk) which are important for bone health. The bottom line: Be a critical shopper and check the labels. I’m not saying don’t buy almond or soy milk, just know that these products may not be as “natural” as they seem.
I love that the leftover almond pieces can be used for almond meal! Almond meal has similar properties to wheat flour, and in most cases can be used interchangeably. Use almond meal to make muffins, loaves, pancakes, cakes. But don’t use it in breads that need to be kneaded, because almond meal doesn’t contain gluten, so the bread won’t rise.
