Almond Butter, Banana & Chia Overnight Oatmeal

overnight oatmeal banana almond 2Are you that time-crunched person who doesn’t “have time” for a balanced breakfast, let alone breakfast at all in the morning? Solution: overnight oatmeal – my daily breakfast of choice for the following reasons:

1. Takes 5 minutes to prep the night before, and is ready-to-eat in the morning

2. Is a healthy, balanced breakfast with whole grains, protein, fruit and plenty of fibre

3. The flavour variations are endless!

overnight oatmeal 3This no-cook method, means that the oats soak up the yogurt and milk overnight while you’re sleeping. Productive, right? The chia seeds also absorb the liquid and soften. Add different nuts/seeds, fruit, etc of your choice to make your favourite flavour.overnight oatmeal banana almond 1

Almond Butter, Banana & Chia Overnight Oatmeal

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 1

Almond Butter, Banana & Chia Overnight Oatmeal

Ingredients

1/3 cup large flake rolled oats
1 tbsp raisins
1/2 banana, sliced
1 tsp ground flaxseeds
1 tsp chia seeds
1-2 tsp cinnamon
1/2 cup plain, 0-2% greek yogurt
1/2-2/3 cup 1% milk (or milk of your choice). More or less depending on how you like the consistency. The mixture with thicken overnight.
2 tsp natural almond butter
optional: 1 tsp honey

Instructions

    Place all ingredients into a mason jar or an airtight container. Stir with a spoon until all ingredients are combined. Put lid on and refrigerate overnight. Enjoy cold in the morning.

    Are there any specific places or brands of almond butter you would recommend? I can’t tell which ones are legit healthy ones from local groceries or supermarkets and sometimes I don’t even see them in the stores! (I live in Richmond BC) Any tips would be greatly appreciated 🙂

      Hi Connie, it doesn’t matter what the brand is, as long as the only ingredient is almonds. The oil will separate to the top and you’ll have to stir it. Avoid any almond butters with extra oils added (like palm oil). Hope that helps!

    Made this last night as my introduction to using chia seeds and I absolutely loved it as did my husband! I will make it again for sure especially for my early morning shifts as it s so easy to prepare the night before and then just grab it in the morning! I made it as per the recipe but am thinking of trying it with banana next time instead of the peanut butter just for something different. Loved it as is though!
